Today I cooked a delicious pot of beets to go with dinner. They were a gift from the neighbour. Yesterday I was lying down on the couch feeling a little low on energy, thinking that I probably needed some additional iron in my diet. I had just closed my eyes when Milan came in from mowing the lawn and asked me to come out and look at something. It was a huge, gorgeous red beet with beautiful deep red stems and dark green leaves. I looked at it with wonder and delight! The neighbour had just pulled it out from the ground! And it was just what I needed to boost my energy...not only because beets are full of iron and other nutrients, but because it was a gift from a neighbor given to me exactly when I needed it. That evening we chopped up the leaves and stems and added them to the pasta and cheese dish I had made. It was amazing! Today I boiled up the actual beet and seasoned it with salt, pepper and a bit of vinegar! It was out of this world delicious! I am so grateful for this beautiful gift from the neighbour and for the beautiful blessing from the Universe and our dear sweet Mother Nature.
